Heat oil or ghee in a pan over medium flame. Add cumin seeds and let them crackle. Add chopped onions and sauté until golden brown. Mix in ginger-garlic paste and green chilies, cooking until the raw aroma disappears. Add turmeric, coriander powder, garam masala, and salt. Stir well.
Add boiled vegetables and mashed potatoes to the pan. Mix thoroughly and cook for 3–4 minutes until the mixture comes together and absorbs the spices. Finish with fresh coriander leaves. Let the mixture cool slightly, then shape it into thick round patties.
